1.5lb (750gram) ground beef
2 medium red onions
4 cloves of garlic
6 sundried tomatoes
1 can tomato paste
2 cans chopped tomatoes
1 pint (1/2L) beef stock
2 tbsp olive oil
1 healthy splash of apple cider vinegar
1 handful parsley
1 handful basil
2 tsp chili flakes
2 tsp ground black pepper
6 tbsp paprika
2 tbsp sugar
salt to taste
Add chili flakes to the bottom of a pot or deep skillet with a lid (do not add lid yet), turn on low heat.
While the chili heats up, chop onions and add to the pot, along with the olive oil. Let this slowly caramelize, turn heat to medium at this point.
While this caramelizes, chop sundried tomatoes, garlic and herbs if time permits, remember to stir onion from time to time. Caramelized, not burnt.
Put garlic and tomate paste in a bowl, add the caramelized onions and chili flakes when it's ready.
Toss the ground beef in the pot and turn the heat all the way up. It needs to be hot or it "boils" instead of browns (which it's doing in the picture at first, boiling, until he heat got high enough.). Once the meat is browned, add the bowl of goodies and stir well, while adding the tomato paste and letting it all brown up just a little. Add the stock and the canned chopped tomatoes, stir well and turn the heat down to low. At this point, add the rest of the ingredients and some of the salt. Taste, add more salt, taste and add salt until it's almost too salty, but not.
Put on the lid, let simmer for 4-6 hours on low heat. Add water as necessary during this process.
